Made from 100% raw sheep milk.
This cheese is matured for over 9 months, giving it a uniform and firm texture that cuts cleanly, with small mechanical holes. It still has a melt-in-the-mouth texture despite its age. It has a strong, elegant and aromatic flavour that is very long lasting.
Curing period:
Minimum 270 days.
