Elaboration:
Made with 100% raw sheep’s milk.
Very thin, hard and smooth bark. When cutting, almost blind pasta with some mechanical eye. It does not present any dark rim near the bark. Buttery cheese with reminiscent of hazelnut, due to the characteristics of a very aseptic milk. Slightly lactic flavor with slight aromatic nuances. In the mouth it leaves a persistent aftertaste with that lactic touch already mentioned.
