<strong>Pata de Mulo Pago ‘Los Vivales’ Raw Milk Sheep Cheese</strong> is made with 100% raw sheep’s milk and no preservatives.
Very thin, hard and smooth rind. When cut, the paste is almost blind with some mechanical eyes. There is no dark ring near the rind. Buttery cheese with hints of hazelnut, due to the characteristics of very aseptic milk. Slightly lactic flavour with light aromatic nuances. It leaves a persistent aftertaste in the mouth with the aforementioned lactic touch.
Maturation: 30 days to 5 months.
Approximate weight: 1.75 kg per piece.

Conservation and consumption
It is advisable to store the cheese in a cool place, between 4ºC and 8ºC, and consume it at room temperature.
