Made with 100% raw sheep milk.
This is a cheese with a very firm consistency and a smooth, thin and hard honey-coloured natural rind. When cut, it can be seen to have occasional, uniformly-distributed mechanical holes and has the characteristics of a firm “aged” cheese. It does not have the roughness of an old cheese, but retains the characteristic melt-in-the-mouth quality of our cheeses, even after a 12-month maturing process. The flavour is linked to the maturing period and the fact that the milk comes from our own ewes. Our �reserve� cheese is strong, clean and aromatic.
